End of the week, groceries not yet done, nothing left in the fridge except for some tomatoes and cheese – what do we have for lunch? This simple, satisfying pasta salad which turned out to be so fantastic that I ended up making it again for my kids’ school lunch the following day.
- 200g spaghetti, cooked according to packet instructions
- 2 medium tomatoes, diced
- 2 cloves garlic, minced
- 2-3 tbsp olive oil
- 1 cup grated cheddar cheese
- salt and pepper, to taste
- 1/4 tsp dried parsley
Toss everything together in a bowl. Serve.
